Oysters Rockefeller
Makes 4 servings.
Ingredients:
24 oysters on the half shell
½ lb. Bacon, cooked and diced
1 package chopped frozen spinach
1 cup heavy cream
1/3 cup seasoned breadcrumbs
dash Tabasco Sauce
pepper
1 Tbl. Anchovy Paste
¼ cup dry white wine
¼ cup parmesan cheese, grated
¼ cup red bell pepper, minced
Instructions:
Arrange oysters in a shallow baking dish.
In a large fry pan, cook the bacon. When it is crisp, remove bacon from the pan and add onions, sautéing in the bacon fat.
Squeeze the water from the defrosted spinach and add to the onions in the fry pan.
Add the cream,Tabasco, anchovy paste, salt, pepper, breadcrumbs and bacon.
Cook, stirring until wellmixed and thick.
Remove from heat and stir in the wine.
Spread sauce over each oyster; sprinkle with cheese and a few minced red bell pepper.
Bake in a preheated 400° oven for about 5-8 minutes until cheese melts.
